Ingredients
- Stage 1 – Orange Juice, Dried Fruit & Spices
- 1 cup Orange juice fresh squeezed - about 3 oranges
- 2 tbsp Orange peel finely chopped - 1/4 of an orange
- 4 tbsp Goji berries or sultanas, dates, or dried apricots
- 2 tsp Ginger fresh finely grated
- 2 tsp Pure vanilla extract finely grated fresh ginger
- 1/2 tsp Himalayan salt or natural sea salt
- 2 tsp Ground cinnamon
- 1/4 tsp Ground clove
- 1/4 tsp Green leaf stevia some health food shops sell it
- Stage 2 – Seeds & Nuts to Grind
- 4 tbsp Flax seeds linseeds
- 4 tbsp Chia seeds
- 4 Brazil nuts grown in Brazil etc for selenium content
- 20 Almonds
- 4 tbsp Sunflower seeds
- 4 tsp Rosehips optional - ground powder high in vitamin C, carotenoids & antioxidants
- 4 tsp Molasses blackstrap - add after grinding – helps activate baking soda
- Stage 3 – Dry Ingredients & Banana
- 1/2 cup Rolled oats
- 2 cups Whole-grain wheat flour or gluten-free flour
- 4 tbsp Sunflower seeds or chopped walnuts if you prefer them although less nutritious
- 2 tsp Baking soda it is activated by orange juice + molasses
- 1 ½ cups Banana mashed
- Other
- Coconut oil
- Decoration
- 1 Banana sliced
- 1 tbsp Sunflower seeds or walnuts
- Cinnamon a sprinkle
Instructions
- Preheat oven to 180°C / 340°F. Grease a 9 x 5 in (23 x 13 cm) loaf pan with oil or line with baking paper.
- Stage 1 – Prepare fruit & juice
- 1. Juice 3 oranges to make 1 cup juice. Save the peel from ¼ orange.
- 2. Chop the peel into small marmalade-sized pieces and soak the peel and goji berries in a little of the orange juice to soften them.
- 3. Add the fresh finely grated ginger, vanilla, salt, cinnamon, clove and stevia to the rest of the orange juice and set aside.
- Stage 2 – Grind nuts & seeds
- 1. In a NutriBullet or food processor, grind flax, chia, Brazil nuts, almonds, sunflower seeds, and (optional) rosehips into a flour/ meal (blend max 1 min). It is sometimes better to chop the Brazil nuts up before grinding them as sometimes they seem to escape proper grinding.
- 2. Make a well in the nut and seed flour, add the blackstrap molasses (avoid touching blender sides as it will stick to the sides).
- 3. Pour in the orange juice mix and blend. Let stand a few minutes until it thickens (the chia and flax have absorbed the orange juice).
- Stage 3 – Dry mix & combine
- 1. In a large mixing bowl, combine rolled oats, flour, sunflower seeds and baking soda. Mix well.
- 2. Mash the bananas and add them to the dry mix. Fold in the thick orange-nut mixture and softened goji berries and orange peel. Stir gently until fully combined.
- Decorate & Bake
- 1. Pour the batter into prepared loaf pan.
- 2. Decorate with sliced banana and sunflower seeds or walnuts. Sprinkle with cinnamon.
- 3. Bake for 50 minutes (check at 45 mins with a skewer – ovens vary).
- Cool & Serve
- 1. Place on a cake cooling rack and allow to cool before slicing.
- 2. It can be stored in the fridge in a sealed container. It freezes well.
